You've got to try this delicious Chicken Tikka Naan Rolls complimented supremely with Tumjal! All credit to the My Food Bag team who created this recipe and included it in their Classic menu. A true partnership between My Food Bag and Tumjal! The flavours of Tumjal perfectly balance the mild spice of the chicken tikka and yoghurt. It's tangy and super tasty 🤤
Ingredients:
Tikka Yoghurt
- 100g Yoghurt
- 1/2 tsp tikka masala spices
Chicken
- 600g free range chicken thighs, diced 2cm
- 2 Tbsp tikka masala spices
- 50g yoghurt
- 1 pinch chilli flakes (optional)
- 1/2 tsp salt
Salad
- 1/2 cup chopped cashew nuts
- 1/2 tsp cumin seeds
- 1 telegraph cucumber, diced 1cm
- 1/2 inch coriander, roughly chopped
- 2 tsp vinegar
Naan & Fillings
- 2 baby cos lettuce, shredded
- 2 tomato, diced 1cm
- 1/2 bunch coriander, leaves picked
- Garlic Naan (buy fresh or frozen from your local supermarket)
- Tumjal Relish - a big heap! 🍆
Method

Before you start:
Preheat oven to high grill. Line oven tray with foil and set aside -
Prep tikka yoghurt.
In a small bowl, combine first measures of yoghurt and tikka masala spices with a pinch of salt. Set aside to serve

Prep & cook chicken
Pat chicken dry and dice 2cm. Toss in medium bowl with second measures of tikka masala spices and yoghurt, chilli flakes and salt. Spread chick out in an even layer on lined tray and grill on upper rack for 10-12 minutes, until cook through and charred -
Prep Salad
Heat a small dry fry-pan on medium heat. Toast cashews and cumin seeds for 3-4 minutes, until light brown/fragrant. Shake pan often to avoid burning. Meanwhile, dice cucumber and roughly chop first measure of coriander. Once cashews are toasted, combine all salad ingredients in in a medium bowl and toss to combine. Season to taste with salt and pepper. -
Prep fillings
Shred lettuce, dice tomato and pick remaining coriander leaves. -
Meanwhile, heat/cook naan
Follow manufacturers specifications to heat/cook your naan. -
Serve
Throw everything on top of the naan and finish with a big dollop of tikka yoghurt and Tumjal 🍆. We promise it's delicious!
